"spaghetti" with roasted red pepper sauce


Here is a recipe I made a couple of weeks ago from Civilized Caveman’s collection. It was delicious, so I'm making it again (doubling it this time, to freeze half for another day)! You can use grass fed beef, turkey, or bison. I added mushrooms I had to the sauce. The spaghetti squash is super easy to cook too. Bon Appetit!
Servings: 4
Prep Time: 10 Minutes
Cook Time: 30 Minutes
Ingredients:
Process:
1. Cook your spaghetti squash following the instructions above and set aside
2. In a sauce pan over medium heat saute your onions, garlic, and peppers until your onions are translucent.  You can saute them in the oil of your choice
3. Once translucent add in your ground beef and saute until your beef is cooked through
4. Add in all remaining ingredients and stir well, cover and let simmer for 10-20 minutes stirring occasionally
5. Plate your spaghetti squash and spoon your sauce over the top

field trip

Over the holiday weekend, I dragged the hubby and Emma girl over to HD Buttercup to get my high on design for the week. Emma got tons of attention as always, Drew found some pieces he liked, and I ran around all the different showrooms saying "Look at this! Wait, this is cool! I want that!"


















I'm guessing the next stop will be the dirt bike shop!

nothing says spring like...

...a little trip to MAUI! 

Don't be too jealous...I've only been waiting my whole life to go, and finally get to in April.



In keeping with my love for planning (thanks, Mom), here's the proposed itinerary:

Tuesday:
Arrive in Maui
Lounge at the beach, and maybe get a little surfing in before dinner

Note: I have never surfed in warm water...it's winter wetsuit weather all year here in "sunny" SoCal






Wednesday:
Farmer's Market
Hit up Lahaina & the Maui Brewing Co. (shopping too, of course)


Thursday:
Snorkeling with Trilogy

Friday:
Surf
Feast at Lele Luau



Saturday:
Lounge at the beach and surf

Sunday:
Hike
Any suggestions on a good hike? 

Monday:
Head home
That's a big maybe

and the countdown begins...

...to the TOUGH MUDDER!



I'm not sure what possessed me to sign up for this event, but I now have till February 25 to kick the training into high gear. Am I terrified? Yes (just watch the video)! The course is 11 miles around a lake in Temecula, boasting an array of army style obstacles along the way (I'm looking the least forward to the ice bath and electroshock therapy--yes, you read that right!). If I survive, I may just have get the Tough Mudder tattoo (kidding, mom)!
